Sometimes, unintended consequences can be a good thing.

When Ruth and Tim Pitts closed Cen- tre Street Bistro in October 2019, they had no idea what the future held. The 22-seat restaurant they had operated since 1997 was closing its doors because the real estate had changed hands. The new owners, Blue Flag Development, were planning on renovating the building and putting in a restaurant five times the size of the intimate bistro.

Ruth and Tim spent the next few months looking around for available properties where they could revive their little restaurant. Nothing really spoke to them.

“We realized we never wanted to run a full-blown restaurant again,” Tim said. Centre Street Bistro had been a per- fect business model for the Pittses. They wanted a professional life that gave them time to raise their two young children and be together as family. The bistro allowed that. It was simplicity itself in a restaurant.
